The production chain

Selection of raw materials

The farms are all located in the area of ​​the Cilento and Vallo di Diano National Park and raise carefully selected cow and buffalo breeds, such as the red piebald or the alpine brown, as well as Mediterranean buffalo for the production of Mozzarella di Bufala Campana Dop. This selection criterion guarantees a structuring of the farms according to local uses and with strictly Italian breed animals, bred in semi-free outdoor housing and registered in the appropriate registry required by law. The Park territory, characterized by pure air and clear water, sheltered from the presence of industrial settlements, smog and pollution, is synonymous with guaranteeing the quality of pastures and animal welfare.

Heart of the production

The gastronomic success of our dairy is the result of an accurate and meticulous manufacturing process, which uses completely traditional and artisanal methods and techniques, which have remained unchanged over time, combined with modern technologies. The heart of the production are the more than 50 resources, expert and qualified, which follow each stage of processing, chemical bacteriological control and distribution. The production sector is completed by an efficient and punctual logistic organization and by a brand new internal laboratory for quality control.

Breeding Biological products

Our farms are based on strict respect for the well-being of each individual animal, guaranteed not only by the protection of their health but also by the choice of breeds that can adapt well to the conditions of the local territory. In compliance with the criteria defined by the European Union (Regulations n.834 and n.889, which provide for the use of 60% of fodder produced and 40% purchased), the feeding is scrupulously taken care of with fodder coming from organic crops, in which no pesticides, but only natural fertilizers are used, and certified by the Igea Control Body. Even the land that houses the farms is worked without the use of harmful pesticides that can leave residues in the products then administered to the animals. Each species, then, must be able to express its natural behavior, enjoying ample space as defined by the regulation in proportion to the available land. Therefore, all animals have daily access to pastures and open spaces and their density is limited. Finally, homeopathic and phytotherapy solutions are preferred for their treatment, to avoid the use of antibiotics and medicines in case of any infections.

Animal welfare

In line with Legislative Decree 146/2001, the farms have the spaces available pursuant and animals are cared for by a sufficient number of employees with adequate skills, knowledge and professional skills. All animals whose well-being requires frequent human assistance are inspected at least once a day; those who are sick or injured immediately receive appropriate treatment and, if an animal does not react to the treatment in question, a veterinarian is consulted. Where necessary, sick or injured animals are isolated in special rooms equipped with dry or comfortable bedding. Systems are adopted so that the freedom of movement of the animal is not limited and non-harmful materials are used for the construction of the housing rooms and, in particular, of the enclosures and equipment with which the animals can come into contact. The circulation of air, the quantity of dust, the temperature, the relative humidity of the air and the gas concentrations are kept within limits which are not harmful to animals.  Animal nutrition is healthy and free of harmful substances, it is suitable for their age and species and in optimum quantity to keep them healthy and meet their nutritional needs. All animals have ample access to quality water, to further maintain their health and to ensure their need for liquid absorption is met.
